With the changes I've seen in software over the last 10 years, the advantages of using roaming profiles have pretty much disappeared. It is much easier and faster to manage changes via GPO or by pushing out a script via GPO or PDQ Deploy than visiting each computer or fighting with roaming profiles all the time. However people are free to change them, but if you want to fully control them, you can do so via GPO.

And our imaging process sets the default icons we prefer on the Taskbar. Instead, we manage user a lot of user settings via GPOs - printers, desktop icons, etc. What we've seen is faster login times and a lot fewer profile issues. And any time I have to rebuild a user profile, I now turn off roaming for that user.
